Is frozen meal prep a good idea? Nutrients, storage, thawing and reheating

By the CleanFit team · · 6 min read

Frozen meal prep suits people who have no time to cook. Cold keeps food for a long time without preservatives, and calories and protein generally stay almost the same. What matters is how you handle it: keep it frozen solid, thaw it in the fridge, heat it until hot all the way through, and do not refreeze it once it has thawed.

Is frozen meal prep a good idea, and who is it for?

The clearest benefit is having several meals ready at home. When you are hungry, you heat one meal. You do not need to finish everything within a day or two, as you would with food kept in the fridge. It suits people who want to control what they eat but have no time to cook or shop every day.

  • People who finish work at different times or often get home late
  • People who want to know the calories and protein in each meal without weighing their food
  • People who live alone and always throw food away when they cook
  • People who want backup meals in the freezer for very busy days

There are limits too. You need enough freezer space and some time to heat the food before you eat. Some vegetables may be softer than when freshly cooked. This is normal for frozen food, because ice crystals change the texture of vegetables a little.

Does freezing destroy nutrients?

In general, less is lost than many people fear. Freezing does not significantly reduce calories, protein, carbs or fat, so you can still plan with the nutrition numbers for each meal as usual.

What may drop a little are vitamins that are sensitive to heat, water and air, such as vitamin C and some B vitamins. Most of that loss happens during cooking and reheating, not freezing. Heat only the meal you are about to eat, and heat it once. That is better than reheating the same food again and again.

Another issue is air in the pack. Food exposed to air in the freezer for a long time gets freezer burn. The surface dries out, the color changes and the taste gets worse. It is generally not dangerous, but it does not taste good. Vacuum sealing helps reduce this problem.

Is frozen meal prep without preservatives safe?

The deep cold of a freezer stops microbes from growing and slows down changes in the food. Freezing is a way of preserving food in itself, which is why many frozen food brands do not need preservatives. Still, read the label of each brand.

Many people think freezing kills germs. In fact, freezing does not kill germs. It only stops them growing for a while. Once the food thaws, they can grow again. That is why you need to thaw food the right way and heat it until hot all the way through every time.

CleanFit adds no preservatives and uses freezing to keep the food fresh. Meals come in vacuum-sealed pouches and keep for 120 days in the freezer. We cook without oil, MSG or added sugar. A nutritionist designs the menu, and the food meets Thai FDA standards.

What should you do when frozen meals arrive, and how do you organize the freezer?

When the delivery arrives, put it in the freezer straight away. Do not leave it out. The longer it warms up, the more the quality drops.

  1. Check that no pouch is torn or leaking, then put them in the freezer
  2. Write the delivery date on the container or basket you keep the pouches in, so you know which batch came first
  3. Put the older batch at the front and always eat it first
  4. Open the freezer as little as possible and close it quickly, so the temperature stays stable

Vacuum-sealed pouches are flat. You can stack them or stand them in a row, and they take up less space than rigid containers. Try these ideas.

  • Stand the pouches upright like files, so you can take any one without emptying the whole shelf
  • Make zones by meal or by day, such as a lunch basket and a dinner basket
  • Sort by type (chicken, pork, noodles, fish, shrimp) or by spicy and not spicy, so you grab the right one when you are in a hurry
  • Do not pack the freezer too tight. Leave space for cold air to move around
  • Before the delivery day, clear things you do not need out of the freezer

If you have a small freezer, like the ones in many condo fridges, you do not need to order a lot at once. Pick a pack that fits the space you have, or order the CleanFit 90-meal pack and split it into 2 deliveries. Before you order, check the delivery date with your postal code, so someone is home to receive the food and put it in the freezer right away.

How do you thaw frozen meals safely?

The simple rule is to keep the food cold while it thaws. The easiest and safest way is to move the meal from the freezer to the fridge in advance. For example, move tomorrow's lunch to the fridge before you go to bed. If you forget, you can heat it straight from frozen.

MethodHowWatch out for
Thaw in the fridge (recommended)Move the meal you plan to eat to the fridge in advanceIt takes a long time and needs planning. Eat thawed food soon

Thaw at room temperature (not recommended)Leave it on a table or kitchen counterThe outside warms up while the inside is still frozen, so germs grow easily. Hot days are even riskier
Ways to thaw frozen food, based on general food safety principles

Once a meal has thawed, treat it like any cooked dish. Keep it in the fridge and eat it soon. Do not leave it out, and do not put it back in the freezer.

How do you reheat frozen meal prep so it is hot and still tastes good?

You can use a microwave or a pan. The key is to heat only the meal you will eat, and make it hot all the way through, not hot at the edges and cold in the middle.

  • In a microwave, put the food in a microwave-safe dish and cover it loosely to let steam out. Heat it in short rounds and stir in between, because microwaves often heat unevenly.
  • In a pan or pot, use medium to low heat and keep stirring until the food is hot all the way through. If it gets dry, add a little water.
  • The middle should be hot enough to steam. Warm is not enough.
  • Eat it all at that meal. Do not keep it to reheat again.

Every CleanFit meal is the main dish only, with no rice. If you want rice, cook the amount that suits your goals. You choose every meal yourself from 38 dishes with chicken, pork, noodles, fish and shrimp. See the full menu with nutrition facts.

Can you refreeze thawed food, and what mistakes do people often make?

We do not recommend it. A second freeze makes the texture and taste worse. If the food thawed outside the fridge or sat out for a long time, the risk from germs is higher too, because freezing again does not kill germs that have already grown. It is best to thaw only the meals you will really eat. These are the mistakes we see most often.

  • Not putting the food in the freezer as soon as it arrives
  • Leaving food to thaw on the table for a long time, especially on hot days
  • Thawing many meals at once and not eating them in time
  • Heating only until warm, with the middle still cold
  • Reheating several times, or heating and then putting it back in the fridge again and again
  • Keeping meals in the fridge and expecting them to last as long as in the freezer

If you want to try ordering, read how to order first. Then pick a pack that matches the number of meals you really eat and the space in your freezer.

Frequently asked questions

How long does frozen meal prep keep?

It varies by brand and depends on how the food is packed, so follow what the seller states. CleanFit meals keep for 120 days in the freezer, and you should put them in the freezer as soon as they arrive.

Can I refreeze frozen food after it thaws?

We do not recommend it. The texture and taste get worse, and if the food thawed outside the fridge, the risk from germs is higher too. It is best to thaw only the meals you will really eat.

Is frozen food less nutritious than fresh food?

In general, calories and protein stay almost the same. Some heat-sensitive vitamins may drop a little, which also happens with any cooked food.

How do I reheat frozen food without a microwave?

Use a pan or pot. Put the food in, use medium to low heat and keep stirring until it is hot all the way through before you eat.

Does frozen meal prep contain preservatives?
